
Here is the MOST SIMPLE way to make your own veggie broth. But! In order to make this work: you must start collecting those veggie scraps! Broccoli stems, leek leaves, carrot tops, green onion roots, onion skins, garlic stems, herb stem & scraps. Pretty much anything you cut off your veggies now becomes broth ingredients!
PRO TIP: collect your veggie scraps throughout the week/months & store them in the freezer to keep them fresh & on stand by for brother making day!
INGREDIENTS:
6-7 cups of veggie scraps
10-12 cups of water
2 bay leaves
1 sprig of rosemary *optional*
Sprinkle of oregano
DIRECTIONS:
Bring 10-12 cups of water to a boil in a large pot. Once water is boiling add veggie scraps & lower heat to a simmer. Cover for 1 hour. After 1 hour turn heat completely off & let broth sit there for an additional 30 minutes to slightly cool. Add salt & pepper to taste. Grab a frying spoon & start to fish out as much of the veggie scraps as you can. Pour broth into a large glass jar & store in fridge with air tight lid. Try to use broth within 7-10 days. OR you can freeze broth by transferring it into an ice cube tray & storing in freezer for up to 3 months.
